Hello, friend. It’s been awhile.
Over the past few months, I’ve been getting used to a different routine: waking early to move my body, heading to my new-ish job, writing and writing and writing, and then commuting home. Weeks pass quickly and it’s both exhausting and empowering. It makes me wonder where the time goes, and if things will ever slow down—but at least I’m making a life in that passing time. That’s a good thing.
And to be honest, as I sit on the train on my way back to Brixton each night, I’m not thinking about any of those big life questions. I’m mostly dreaming about what I’ll make for dinner, or the baking project I’ll take on this weekend, or the glass of wine I’ll pour myself, or the cocktail I’ll shake up. And I’m okay with putting a pause on grander reflections for those 45 minutes. It’s kept me (mostly) sane and led to some beautiful (and not so beautiful) results:
Lots of granola
Honey-miso aubergine and rice
Vegan cookie dough cashew ice cream
A riff on this Mexican Quinoa Salad
My very first time making congee
Really good veggie burgers (recipe coming soon!)
More pasta than I care to admit
A renewed obsession with Benihana-style Carrot-Ginger Dressing
One failed attempt at growing a SCOBY (London, you need more kombucha!)
I’ve mostly been keeping these kitchen triumphs and tribulations to myself and to Instagram, but today I’ve got one to share right here. It’s a simple, summery cocktail, and it’s perfect for unwinding after a long day (or for slowly sipping in the garden as you read that Murakami book you’ve been getting through at a glacial pace).
This raspberry, lime, and rum spritzer is heavy on berry tartness, but topping it off with soda water keeps the whole thing light and refreshing. I like to mix up the muddled berries, lime juice, and rum and pour it all into the glass without straining because I’m a fan of the texture of raspberry seeds. Feel free to strain if seeds aren’t your style.
If you, like me, are looking for a little escape from life’s big questions, this is my gift to you. It’s got rum in it and it’s pink. What more could you want?
- 10 raspberries
- 1½ tsp. sugar
- Juice of 1 lime
- 2 oz. white rum
- Soda water
- Lime wedges and more raspberries, for garnish
- In a mixing glass, muddle the raspberries and the sugar. Add the lime juice and the rum and stir well. Pour into an ice-filled glass (if you prefer your drink without raspberry seeds, strain into the ice-filled glass). Top with the soda water and garnish with lime wedges and more raspberries.
